Good Cool Drink

Legacy of Linda Clark

 

Everyone can drink, kids will love it.

Make a gallon of any kind of Kool Aid sweetened drink

mix in a couple cans of Ginger Ale.

Let it get real cold, or you can pour it over ice cubes.

Or freeze some of it in ice cube trays.

Kids will like it as a Pop Sickle, too.

 

CABBAGE BORSCHT

Lynn Ruth Miller

 

1 large head white cabbage

2 sour apples

2T unsaturated oil

4 T Brown sugar

2 T vinegar

2T flour (optional)

Shred cabbage, add apples finely sliced.

Heat oil in your soup pot.

Put in the cabbage & apples and cover with boiling water.

Add the sugar and vinegar and cook until tender.

TASTE WHEN YOU THINK IT IS DONE AND ADJUST SEASONINGS.

 

Best if it sits covered tightly in the refrigerator for a few days.

Serve with sour cream

 

 

GREEN TOMATO PICKLES

Wash small, firm green tomatoes and pack in clean, sterilized jars.

 

To each quart jar add a clove of garlic, dill and chili peppers.

 

Make liquid solution:

2 qt water

1 qt vinegar

½ cup salt (Kosher is best)

Boil for 5 minutes.

 

Pour over tomatoes, seal and store for 6 weeks. Makes 6 quarts.

Serve with anything that needs a boost except chocolate cake.

 

Amish Corn Meal Mush

 

6 ½ cups yellow corn meal

½ cup flour

1 Tablespoon salt

4 cups cold water

2 cups cold milk

10 cups boiling water

olive oil

 

Mix corn meal, flour, and salt together in large pot.

Slowly add cold water and milk until smooth.

Slowly add boiling eater.

Stir in real good.

Heat on high for approximately 2 hours, stirring with wooden spoon every ten minutes.

Mixture will become thick and not separate when done.

 

Cover with plastic wrap.

Cool to room temperature and refrigerate overnight, then remove from pan.

Slice in ¼ inch slices and fry in skillet that olive oil has slowly been heated up in.

Brown on both sides.

Serve while hot with maple or corn syrup.

 

 

Battered Fried Zucchini

2 eggs

2 cups flour

1 cup milk

1 tsp baking powder

salt and pepper

 

chopped garlic or garlic salt

parsley

chopped onion

¼ cup grated cheese ({pinch} {in} cheddar)

 

Beat eggs, add flour, milk, & B. Powder, salt, pepper ect.

 

Add 1 (med) grated zucchini

 

Drop by large spoonfuls into hot oil

Fry in oil until brown

 

Drain on paper towels

 

 

Chip Dip

1 pkg. Onion soup mix

1 pint sour cream

½ tsp. Worcheshire sauce

2-3 dashes hot sauce

 

Mix ingredients together and chill. Serve with Chips or Crackers.

 

Banana Nut Bread (Sugar Free)

This recipe is from a Sugar Free Diabetes Cook Book

 

3 or 4 mashed soft bananas

1 Tablespoon of granulated sweetener (Equal)

2 eggs

1 ¾ c flour

3 teaspoons baking powder

¼ teaspoon salt

¼ c of chopped nuts

 

Sprinkle artificial sweetener over mashed bananas.

Stir until dissolved.

Beat eggs and mix into bananas.

Add dry ingredients, plus nuts.

Mix until blended good.

 

Pour into a greased 9x5x3 inch loaf pan.

Bake at 350 degrees for 25 minutes.

Lower hear and bake an additional 35 minutes.

 

 

 

Doughnuts

1 cup sugar

1 egg

1 teaspoon baking powder

1 cup sour milk

pinch soda

pinch salt

flour - enough to handle

 

Stir together sugar and egg. Mix soda in sour milk and add to sugar and egg mixture. Stir in baking powder and flour. Use enough flour to roll out and cut with doughnut cutter.

 

Fry in deep hot shortening or lard.

 

 

Brownies

Melt together:

¼ pound margarine

2 squares unsweetened chocolate

 

Stir into mixture:

1 cup sugar

2 eggs

½ cup flour

1 teaspoon salt

1 teaspoon baking powder

1 teaspoon vanilla

1 cup nuts

 

Pour into ungreased pan and bake 20 minutes at 350 degrees

 

 

Quick Coffee Cake

½ cup sugar

½ teaspoon salt

1½ cups flour

3 teaspoons baking powder

1 egg, beaten in a cup and finish filling cup with milk

4 Tablespoons butter (melted) added last

 

Mix all dry ingredients together and to this add egg, milk and melted butter.

Mix.

Sprinkle sugar and cinnamon rather heavily on top,

then bake in a medium hot oven about 20 or 30 minutes.

Bake in a large enough pan that the batter will be thin in the pan.

 

 

Meal in One

2 ½ cups uncooked Macaroni broken in 1-inch pieces

2 tablespoons fat

6 tablespoons chopped onion

2 lbs ground beef

1 teaspoon salt

Dash of pepper

3 cups cooked or canned tomatoes

1 to 2 teaspoons chili powder (if desired)

1 cup grated American cheese

 

Cook macaroni in large amount of boiling salt water.

Rinse in cold water.

Melt fat in large skillet.

Add onions and cook until light brown.

Add beef, salt, and pepper and cook until meat is browned.

 

Add macaroni, tomatoes and chili powder.

 

Turn mixture into baking dish and sprinkle cheese over top.

Bake in moderate oven, 400 degrees, 30 minutes or until cheese is melted.

Serves 8.

 

Mayonnaise

Grandview, Indiana

 

Beat 2 egg yolks until thick. Beat in:

1 teaspoon salt

1 teaspoon sugar

1 teaspoon dry mustard

¼ teaspoon paprika

5 Tablespoons lemon juice

 

Gradually add:

2 cups cold salad oil

 

When mixture begins to thicken, add oil more rapidly. Beat in last:

1 Tablespoon hot water

 

Store in covered container in refrigerator.
