
Rabbit or Squirrel Dressing

1 rabbit or squirrel, cut up
1 large pan of cornbread
Salt and Pepper to taste
1 Egg
Directions
Place rabbit or squirrel in large boiler, cover with water, boil until tender. Save water rabbit or squirrel was cooked in. Crumble cornbread in large bowl. Stir egg into cornbread.
Add enough water Rabbit or squirrel was cooked in, to cornbread mixture, to make a thick mixture, stirring well. If you like dry dressing add less of the water; for moist dressing, add more. Add pieces of rabbit or squirrel to mixture. Salt and pepper to taste. Bake at 350 degrees until slightly brown on top.
Note: Grannie always just added the pieces on the bone. You took a piece of meat out of the dressing, then had the dressing to go with it. I prefer to remove the meat from the bone before placing it in the dressing mixture.

Diehl's Old-Fashioned Chicken and Dumplings
(Copied from an ancient scrap of paper in my recipe box)

Chicken and Dumplings
Chicken Broth
1 4-lb roasting chicken
5 c. water
1/2 onion, chopped
1 handful of chopped carrots
1 handful of chopped celery
salt, pepper, bay leaf, etc.
Dumplings
1 c. unsifted flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
1 large egg
1 Tbsp. salad oil
3 Tbsp flour
Place chicken, vegetables and seasonings in 6-quart Dutch oven;
bring to boil and then simmer 1 hour.
Remove from heat, place chicken in bowl to cool.
Meanwhile, make dumplings:
Mix together
1 c. flour,
b.powder,
salt.
In small bowl, combine milk, egg and oil.
Pour into flour mixture, mix till moist.
Set aside.
Strain broth, skim off fat;
Replace 5 cups of broth in Dutch oven.
In a small bowl, place 3 Tbsp flour and gradually whisk in 3 Tbsp water til smooth.
Stir that into broth, bring to boil; boil 1 minute.
Drop Tbsp-sized dumpling batter into gently boiling broth.
Cook uncovered 10 minutes; cover tightly and cook 10 minutes more.
Cut or de-bone chicken into bite-sized pieces.
Add to broth. cook 5 minutes more.
